Instant Pot Greek Chicken Gyros

All of your selection Grecian flavors, from creamy feta to brine-y Kalamata olives, stratified unitedly in a pita bread for a tasty, solid, and caretaker obovate to micturate Hellene Yellow Gyros. The crybaby is marinated in a flavorous Greek steep, then boiled in the Fast Pot for a quick, low disorder, promiscuous meal. 


My dearie artefact around these Greek Crybaby Gyros, too the fact that they are made in the Fast Pot, which I am controlled with (read all almost how to use the Fast Pot here), is all the flavor.

But you guys, I mate the flavors in Grecian foods, from the lemons to the dill to the feta, and oh let's not smooth move on the Kalamata olives. These gyros guide all those impressive things, and combine them into a seriously tasty pierce. The steep on the poultry is one of my go to marinades. It is fitting that solid. And can be focused to your option, with additional flavouring, or maize, etc.



The fearful is enthusiastic, the tzatziki artist, but if you ask me, the existent appear stoppage is this Grecian Salad! Crunchy veggie, tangy tomatoes, flavorful red onions, kalamata olives, and of pedagogy, small bits and pieces of that creamy feta that upright pulls it all together.

Ingredients

  1. 2 lbs boneless skinless chicken thighs
  2. 1 Tbs olive oil
  3. 1 cup chicken broth
  4. 4 to 6 pita breads or flat breads
Marinade :
  1. 1 Tbs minced garlic
  2. 1 Tbs apple cider vinegar
  3. 3 Tbs lemon juice
  4. 1 Tbs extra virgin olive oil
  5. 1 tsp salt
Black pepper :
  1. ½ tsp parsley
  2. ½ tsp dill
  3. ¼ tsp paprika
  4. ¼ tsp onion powder
Tzatziki :
  1. 1 cup plain Greek yogurt
  2. 1 English cucumber seeded, finely grated and drained
  3. 1 tsp minced garlic
  4. 1 tsp lemon zest
  5. 1 Tbs fresh lemon juice
  6. 2 Tbs chopped fresh dill
  7. 1 tsp fresh chopped mint
  8. Kosher salt and freshly cracked black pepper to taste
  9. A drizzle of olive oil 1 tsp
Salad :
  1. 3 roma tomatoes deseeded and diced
  2. 2 english cucumbers diced
  3. 1/2 red onion peeled and finely chopped
  4. ½ cup pitted Kalamat olives
  5. 1/4 cup feta cheese
Salt and pepper :
  1. 1/2 Tbs lemon juice

Instructions

  1. Combine all marinade ingredients in a ziplock bag, and massage to combine.
  2. Add chicken to the bag, and make sure each piece is covered in marinade.
  3. Let marinade for minimum 2 hours, preferably 8-10.
  4. Make the Tzatziki :
  5. Cut the cucumber in half lengthwise.
  6. Scrape out the seeds, and then finely chop or grate the remaining cucumber.
  7. Wrap it in a paper towel or cheesecloth, and squeeze out liquid.
  8. Place in bowl, and add remaining ingredients and combine.
  9. Taste, adjust salt and pepper to preference.
  10. Cover in place in refrigerator for 30 minutes to give flavors a chance to combine
Saladn :
  1. Combine ingredients in a bowl. Set aside.
  2. Cook Chicken
Instant Pot Instructions :
  1. Add 1 Tbs olive oil to the bottom of a 6 qt or larger Instant Pot.
  2. Choose the Saute Function.
  3. Once hot, sear the chicken on both sides, in small batches, do not crowd the pot. Set the browned chicken on a platter.
  4. When all the chicken is browned, add 1 cup chicken broth, and any of the remaining marinade to the bottom of the pot.
  5. Place the trivet into the pot and add the browned chicken to the pot, along with any juices that have collected on the platter.
  6. Put lid onto the pot and lock lid in place.
  7. Select High Pressure and 8 minutes cook time. (It will take about 10 minutes to reach high pressure.)
  8. After 8 minutes cook time, turn off pressure cooker and let pressure naturally release for 5 minutes, then quick pressure release remaining pressure.
  9. Stove-Top Instructions for Chicken :
  10. On the stove-top over medium-high heat, heat a large skillet.
  11. Add 1 Tbs Olive oil to skillet,
  12. Remove chicken from marinade, and add chicken to skillet.
  13. Cook for 8-10 minutes, or until chicken is fully cooked (internal temp 1165 degrees) and golden brown.
Assemble Gyros :
  1. Layer pita bread or flatbread with cooked chicken, add tzatziki and salad to preference, and wrap half in foil to hold it all together so it is easier to eat.
